Thai Select or Thai Select Premium certification identifies Thai restaurants that offer at least 60 percent authentic Thai foods on their menus. They also imply that these restaurants employ the same or similar cooking methods as in Thailand, and may import ingredients from Thailand. The certifications, however, neither rates foods nor endorses any quality standard of the restaurants. They merely indicate authenticity of the Thai foods prepared.
The Thai Select certification is divided into two categories based on the levels of design and service excellence:
• Thai Select Premium indicates a high degree of excellence. This is given to restaurants with a score of 85 percent authenticity or above. With the premium status, the restaurants suggest traditional Thai decorations and outstanding services. Thai foods offered at these restaurants are authentic, and premium quality ingredients were used. Overall, these restaurants produce a premier dining experience.
• Thai Select indicates a degree of excellence of 3 to 4 stars. This is presented to restaurants with a score between 75 to 84 percent authenticity. These restaurants serve fine authentic Thai foods. Overall these restaurants offer diners a fine dining experience.

Green curry is a variety of curry in Thai cuisine. The name “green” curry derives from the color of the dish. Green curries tend to be as hot as red curries or hotter. The green color comes from fresh thai basil and green chillies. The “sweet” in the Thai name (wan means “sweet”) refers to the particular color green itself and not to the taste of the curry. As this is a Thai curry based on coconut milk and fresh green chillies, the color comes out creamy mild green or, as this color is called in Thai, “sweet green”. 1. The Evolution of Thai Cuisine
Everyone knows Thai cuisine for its tom yum goong and savoury grills, but it is not so easy to define the national cuisine of Thailand, even with so many foreigners and Thais ready to declare their favourites – tom yum, pad thai, yum nuea (spicy beef salad), gaeng kiew wan (green curry), som tum … the list goes on.
Thailand is a country with a mosaic of different races, it geography, its climate and its prosperity and abundance of natural products give great variety to its cuisine – and these same assets are key to its potential.
Regional dishes are related to their homeland’s culture, ecology, social structure and racial diversity. Chinese and Indian immigration to Thailand and French, Portuguese and Dutch imperialism in past centuries certainly influenced Thai cuisine a great deal. The cooks of Siam learned about deep-frying and porcelain kitchenware from the Chinese. They also adapted the spices and replaced the milk and yoghurt in Indian cuisines and adapted them in to more hot and spicy curries of their own. Everything on the table is an accompaniment to rice, the most important component to rice, the most important component of the meal. Generally the rice is served with a curry, a fish dish, a stir-fry, a salad, a soup and vegetables. All the food is served at once. Unlike European tradition, soups come in a large bowl and are eaten with the meal, not before it. Meals begin when the host says “kin khao” or “eat rice”.
